Masala Dosa with White Coconut Chutney
By : Shiny Blesson
For Dosa batter.
Dosa rice(pachari )- 2 cups
Channa dal - 1/2 cup
Urad dal - 1 cup
Fenugreek seeds - 2 tsp

Soak this for 6 hours then grind with 1 cup cooked rice and water and leave to ferment overnight. Add salt and start making dosas by spreading them as thin as possible on a hot tawa. ( Sprinkle some water on the tawa to bring the temperature down and then wipe with a cloth or a cut onion / potato like I do.Then spread the batter. You will get more crispness and flavour this way.)
Mix a little oil / ghee to idli milagai podi( red chilli chutney powder) and spread on the top of the dosa. This is totally optional but it tastes awesome. Put the potato filling and roll it over.Take off the heat.
