Lemon Rice

Lemon Rice

An easy lunch box item.


Cooked rice - 2 cups
Onion medium- 1 chopped
Green chilli- 1 chopped
Ginger- 1/2 tsp chopped
Oil _ 1/2 tbsp
Mustard - 1/2 tsp
Urad dal - 1/2 tsp
Coconut grated ( optional ) - 1 or 2 tbsp
Turmeric powder - I/4 tsp
Juice of one or 1 1/2 lemon
Curry leaves - as needed
Salt- as needed
Peanuts /Cashews - some

To a hot pan add oil, allow mustard and urad dal to splutter.Add in the onion,chilli, ginger,cashews and curry leaves and saute .Do not allow it to brown.Then add the turmeric, coconut ,salt and stir well. Add in the lemon juice, mix and immediately put in the rice. Switch off the flame and stir to mix everything well.

P.S - Coconut can be avoided.Peanuts are usually used in lemon rice , I have added cashewnuts instead. Taste and add more lemon juice if desired.
