Mayonnaise ഇഷ്ടമില്ലാത്തവർ ചുരുക്കം തന്നെ. അത് നമുക്ക് തന്നെ എളുപ്പത്തിൽ ഉണ്ടാക്കാൻ പറ്റുന്നതാണെങ്കിലോ? എന്നാൽ ദാ പിടിച്ചോ, recipe...

Egg yolk- 2
Salt- to taste
Sugar (optional)- to taste
Mustard paste- 1 tsp
Vinegar- 1tsp
Pepper powder- 1 pinch
Lime juice- 1/2 lime's
Olive oil (or any other oil with no smell)

1. Add mustard paste, pepper powder, lemon juice, vinegar, salt to the egg yolk. Whisk it well.
2. Slowly add oil while whisking the egg yolk. [Note:- continuous stirring will avoid curdling to take place]. Whisk in the same direction (clockwise or anti clockwise)
3. Keep whisking and adding the oil, till the oil is well combined and soft peaks are formed.

1. You can use one pinch of mustard powder instead of mustard paste. Adjust the quantity of vinegar to 1 tbsp, if using mustard powder.
2. If it gets curdled, dont throw away. Repeat step one and use this curdled mixture in the place of oil. Continuous whisking is the key to get thick mayonnaise.
