Mushroom and Egg Thoran

1. Mushroom – 1 packet
2. Onion – 1 big
3. Ginger – small piece
4. Green chilly – as per you
5. Curry leaves
6. Grated coconut – as needed
7. Turmeric powder- as required
8. Eggs – 3
9. Salt and pepper

Finely chop onions, ginger and mushroom. Cut green chillies lengthwise or round.
Beat egg with a pinch of salt and pepper and keep aside.

On a heated pan, add some oil and mustard seeds and let it crackle.
Add the onions, ginger and mushrooms. Saute’ it for about 2-3 minutes.
Add coconut+ greenchilly +turmeric powder + curry leaves+salt.
Let it cook. Once cooked, move it to a side of the pan, and add the beaten eggs. Scramble it and mix up with the mushroom. Add a pinch of pepper powder for a good taste..

Note: If you have leftover mushroom thoran and is less for the next day, you can add some beaten egg and make a new thoran.
