Kerala Style Vattayappam ( Steamed Cake)

1. Raw Rice(Pachari) 2 cup
2. Dry Yeast ½ tsp
3. Sugar 2 tbsp
4. Rava ( semolina ) – 2 tsp
5. Coconut 1 1/2 cup
6. Water ½ cup
7. Raisins and cashew nuts – for garnishing
8. Salt to taste ½ tsp

• Wash and soak rice for 5-6 hours.
• Dissolve the yeast in some warm water.
. Cook rava with 2 glasses of water till it becomes soft & loose. Let it cool.
• Grind the rice along with coconut and cooked rava thoroughly.
• Add the dissolved yeast,sugar and salt. Make sure that the batter is not too loose. It should have a medium consistency.

. Keep it for 4 to 5 hours. After 5 hours add 1/2 cup sugar (more sugar can be added if required ) & stir well.

. Apply a liitle ghee/oil in a cake tin & pour the batter into it. Put some raisins and cashew Nuts on the the top.
Steam it for 20 – 25 minutes.
Soft and spongy vattayappam is ready.
