Wheat flour / Atta - 1/2 cup
Rawa / semolina - 1/2 cup
Rice flour - 1/2 cup
Baking soda - 1 tsp
Salt - a pinch
Cardamom powder - a pinch
Jaggery - 1 cup ( grated )
Coconut - 1/2 cup ( grated )
Water - as required
Ghee / oil - for frying

In a mixing bowl, take wheat flour, rice flour, semolina, salt and baking soda. Mix well . In a pan, add 1/2 cup of water to grated jaggery and heat it up nicely until its melted completely. When cooled strain jaggery syrup to remove impurities.

Add jaggery syrup little by little to the bowl. Make a slightly runny batter than our dosa batter in consistency. Add cardamom powder and grated coconut to it. Mix well and keep it aside for 5, 10 minutes. Heat a paniyaram pan, Add in ghee or oil. Drop spoonfuls’s of batter into each holes and fry it till golden brown in a low flame. Flip over and fry the other side too until crispy. Remove from pan, and drain it in a tissue. Serve as a tea time snack.
