Rum Soaked Grilled Pineapple with Vanilla ice cream

• 1/2 cup dark rum
• 1/2 cup packed brown sugar
• 1 tsp. ground cinnamon (plus extra for dusting)
• 1 pineapple, cored and cut into rings of choose desired thickness
• Vanilla ice cream

How to:
In a small bowl, mix together rum, brown sugar, and cinnamon. Keep the pine apple rings for margination in the mixture at least for ½ hour, flipping both sides.
When you are ready to cook the pineapple, strain out the extra rum sauce from the pan of pineapple, and transfer it to a small saucepan. Bring the sauce to a simmer over medium-high heat, then reduce heat to medium-low and simmer for about 10-15 minutes, or until reduced by half. Set aside.
While the sauce is cooking, heat a grill pan or saute pan over medium-high heat until hot. Lightly grease the pan with butter or cooking spray. Grill pineapple slices in an even layer and cook for 3-5 minutes per side (depends on the thickness of the rings) until browned and grill marks appear. Transfer to a serving plates, and set aside.
Top each pineapple ring with a scoop of ice cream and drizzle with rum sauce also lightly dust the with some extra cinnamon. Serve immediately hot.
Note: Those who are not happy to use the RUM can try honey instead, and no need to prepare the sauce over the heat, you can directly drizzle the excess honey, brown sugar and Cinnamon over the dessert at final stage.
